Since September 2022, campus caterers have had to comply with a document drawn up by the Catering and Sustainability Committees. This reference framework sets out the sustainability and nutritional balance objectives for meals served on UNIL's Dorigny campus.
Adherence to this framework is binding and catering outlet owners can face penalties for non-compliance. They are monitored on a daily basis by the Beelong calculator, which enables them to visualise the efforts made in relation to these objectives.
